Introduction

Salmon is tasty and full of protein – a favorite among clean eaters.

Luckily, I live in Seattle, where salmon is abundant and fresh. Our family has salmon dinner at least once a week.

Because I’ve a bit of a sweet tooth, today’s clean eating salmon recipe involves a sweet, sugary glaze. Everyone, including our toddler, loved it.

I hope you like it too.

Ingredients

  • 4 oz. of Atlantic salmon fillet
  • 1/4 cup of pure cane brown sugar
  • 1 tbl spoon of butter
  • 2 tbl spoons of olive oil
  • 1 cup of muscato wine (or dessert wine)
  • 1 tbl spoon of corn starch
  • Natural sea salt
  • Black pepper

Directions – Salmon

  1. Rinse salmon thoroughly, and pat dry with a paper towel.
  2. Rub salt, pepper and olive oil all over salmon. Distribute evenly.
  3. Preheat oven to 350 degrees.
  4. When oven is heated, bake for 20 minutes, or until salmon is thoroughly cooked.

Directions – Brown Sugar Glaze

  1. In a small pan, melt butter with low to medium heat.
  2. Pour in sugar, and stir slowly.
  3. When sugar is melted, add wine. Stir.
  4. If you need to thicken the sauce, then stir in corn starch.
